Sponge Cake Deluxe mix - 4kg from Fun Cakes

- this cake is delicious on its own, or makes a perfect base for all kinds of pastries and cakes.
- for 250g of cake mix, you will also need 200g of eggs and 25ml of water (plus 499g of sugarpaste if you choose to ice it!)
- can be flavoured with concentrated flavourings
- can be coloured by good quality oil based icing / food clourings
- approx 4kg / 4000g / 8.8lb nett
- makes approx 1.7kg of cake batter when water and egg are added

* instructions from FunCakes for 250g of sponge mix:
1. Ingredients need to be at room temperature.
2. Preheat the oven to 175°C (convection oven 160°C).
3. Put the mix, eggs and water in a bowl.
4. Mix at high speed for 7-8 minutes.
5. Then mix at low speed for another 2-3 minutes.
6. Grease the baking pan
7. Fill the greased baking pan up to two thirds with the batter.
8. Place the cake in the preheated oven.
9. Don’t open the oven during baking! Top tip - the cake is ready when it feels springy to the touch.
10. Release the cake from the baking pan immediately after baking and let it cool down on a cake grid.
additional tips:
every oven is different - be prepared to adjust bake profile as required for your own individual oven and for cakes of different sizes and depths
allow the cake to cool for at least 10 minutes before turning it out of the tin
turn out on to a cooling rack to allow the cake to cool further
once cool, wrap and store the cake in a cool dry place
for best results, decorate within 48 hours of baking and eat within 10 days
