BAGEL baking kit from Baked In

- you'll also need: 200ml warm water (75ml + 125ml), Oil for greasing
- ingredients: strong white bread flour (wheat flour, statutory nutrients: (calcium, niacin, iron, thiamin)), granulated sugar, yeast (yeast, emulsifier: sorbitan monostearate), salt (salt, anti-caking agent: sodium ferrocyanide).

- instructions from Baked In:
- "In a large bowl add bag 1 (yeast), bag 2 (sugar, salt), and bag 3 (flour). Mix thoroughly.
- Make a well in the middle of the dry ingredients and add 75ml of lukewarm water. Mix until the water has been combined. Measure an additional 125ml of lukewarm water and add sparingly, mixing until the dough is firm, but not crumbly. You may not need all the water.
- Grease a large bowl and with oil and set it aside. On a lightly floured surface (flour for dusting), knead the dough for 8-10 minutes until the dough is firm but soft and elastic. Put the dough into the greased bowl, cover with clingfilm or a damp tea towel and leave to prove in a warm place for 60-90 minutes, or until doubled in size.
- Line 2 baking trays with baking paper (if you only have one tray you can bake in batches), and leave to one side. Once proved, tip the dough onto a clean surface and knead for a few seconds to knock the air out. Divide the dough into 6 equal pieces (approximately 80g each).
- Shape each piece into a slightly flat ball, then use the handle of a wooden spoon to make a hole in the middle of each ball. Wish the spoon into the hole, then twirl the bagel around the spoon to make the hole about 3cm wide. Put each bagel on the prepared baking tray. Cover the bagels loosely with cling film or a damp tea towel and allow the bagels to rest for about 10 minutes.
- Preheat the oven to 220C/200C Fan/Gas Mark 7. Bring a large pan of water to a simmer. Using a slotted spoon, lower the bagels into the water, no more than 3 at a time. Soak the bagels for 45 seconds before flipping and soaking for a further 45 seconds.
- Remove and drain excess water from the bagels and return to the baking tray. Bake for 20-25 minutes, or until golden brown and the bases sound hollow when tapped. Transfer to a wire rack and leave to cool for at least 10 minutes before tucking in!"
