- this mix is the easiest way to whip up home-made meringues in next to no time
- simply add water, whisk, pipe and bake
- delicious natural lemon flavour
- no added colour - will bake white with maybe just the slightest hint of colour
- beautifully light textuure for melt-in-the-mouth meringues
- a great time saver mix to have on standby for busy bakers
- each pack will make over 50 x 4cm (1½") diameter meringues or 8-10 larger meringue nests
- pipe the mixture into any shape - sandwich together with fresh cream or buttercream, crumble into desserts or ice-cream, or dip in chocolate

- preheat oven to 100˚C / 200˚F / gas mark low and line a baking tray with baking parchment paper
- sift pack contents into the bowl of an electric stand mixer
- add 115ml (4fl oz) water at room temperature, and stir gently to mix
- using the balloon whisk attachment, mix on high speed for 5–6 minutes until glossy, has increased in volume and holds a stiff peak
- spoon or pipe the meringue mixture into your chosen shapes
- bake meringues for approximately 60–90 minutes, depending on size, then set them aside to cool
- once cooled, store meringues in an airtight container for up to 14 days (can be frozen for up to 2 months)
