Caster Sugar is a refined white sugar, most commonly found in the UK and Australia
aka castor sugar and known as Superfine Sugar in the USA
milled finer than granulated sugar, caster sugar is ideal for baking as it dissolves faster, creating a smoother batter mix for all sorts of cakes, cupcakes and biscuits
the grains are somewhere between the size of granulated sugar and icing sugar
processing removes the molasses content, making the sugar very free flowing
many bakers find caster sugar creates a lighter cake
pack designs may vary from pics shown - normally the resealable plastic pack
Silver Spoon hold the royal warrant - so you know this is really good stuff

if cake is to be left for 1-2 weeks before cutting, add 1 teaspoon glycerine per 500g sugar
