• use to soften texture of icing, to add volume, prevent sugar crystalizing and to retain moisture
• add to modelling paste and modelling chocolate to add 'stretch'
• especially useful if using a cheaper supermarket style brands of fondant icing* or marzipan - adding a little liquid glucose will help avoid the icing cracking and forming elephant skin
• * for best results use a professional quality sugarpaste icing
• controls the formation of sugar crystals when making frozen cakes and desserts, and in confectionery
