Eddie Spence MBE (we're proud to say he's a Scot) is a world class tutor and renowned expert in royal icing. Eddie started his apprenticeship at age 14 in Mackie's bakery in Edinburgh and through a lifetime of working in cake decorating, Eddie became tutorial manager at Mary Ford's sugarcraft school - a name we know many of you will remember fondly. Eddie worked on the Queen's silver jubilee cake and also the wedding cake for Prince Charles and Lady Diana Spencer
